We stayed at the Grohmann for Christmas 2006 when nowhere had any snow.
Val di Fassa has excellent snow cannons and apparently 96% of the slopes were open and so we were not affected by the weather.
We did the Sierra Ronda and everywhere was open. You couldn't ski to the hotels in the valley that was all (this was via a very horrible black so we wouldn't have skied down anyway).
The Grohmann is excellent and I would recommend it to anyone.
The staff are great, friendly and attentive, despite a mad old man dithering around moaning all the time (presumably the owner).
The food was fantastic especially the 5 courses on Xmas eve. The wine is good and cheap and there are loads of regional specialities to be had.
Ski school is a short bus ride away in Canazei and the only time this caused a problem was in the evening if we spent to long at Après ski when the buses are very crowded.
There is no sauna here which is a shame but the rest of the experience more then makes up for this.

If you don't speak Italian or German you might have a few problems as there are very few english speaking people there.
Highly recommended though!!
